Bau Truong is the brainchild of Bac Cang, a 75 year old Vietnamese-Australian chef with a passion for simple Vietnamese food done right. The recipe’s obviously working because Bac Cang has just opened her second Bau Trong restaurant in Haymarket in Darling Square. It’s little more than a bench in front of a small kitchen, but it serves up the most delicious minced prawn and sugarcane skewers and even a deep fried banh mi.
